Gluten is a protein found in wheat. It plays a major part in the formation of the cake structure, and it is what causes cakes to have that particular shape and texture
My Thoughts About Gluten and Additional Information
Hmm…not many comments on this topic. Did you know that legend attributes the discovery of gluten to Buddhist monks in 7th century China who sought meat-like ingredients for use in their vegetarian diet? With easily available wheat flour and water they made a dough which they submerged in cold water and kneaded. The water dissolved the starchy components of the dough and left behind an insoluble, gummy mass, 70% to 80% of which was gluten.
How interesting…it sounds like a forerunner to tofu, especially the “insoluble, gummy mass” description. Tee-Hee. Tofu doesn’t taste bad though…

This is what I have managed to extract from wikepedia about centrifigation. Centrifigation is the process that is used to extract gluten from wheat. It is basically the process described above: With easily available wheat flour and water they made a dough which they submerged in cold water and kneaded. All that trouble to say that they stuck the wheat in water and kneaded it.
